We spent our first 4th of July away from home at one of Tyler's classmate's family lake house. It was right on the shore of Lake Canadaguia about 1 hour south east of us. It was so beautiful there. We had a great time on the lake even though it was a chilly 69 degrees that day.
This is Katie and Robin, 2 of Tyler's classmates.
Robin and I went on the tube together and had a blast. My arms are so sore today!
This is Tyler riding the tube bronco-style. This is when everyone tried to come up with a good nickname for him. The consensus was "Psycho T". Why is my husband so crazy?
After the lake we played Bocce ball, and randomly, Tyler and I won! Apparently Tyler's classmates now think that all Mormon's do is play games like Bocce. I guess they are kind of right...
After an awesome BBQ, we had a bonfire and watched as all the houses along the lake shoot off their own illegal fireworks (All fireworks here are). It was really pretty watching them with the reflection on the lake. Thanks to Mary for letting us come and to Katie for all the pictures! We had a blast!
I tried a new recipe for oatmeal cookies that turned out to be totally delicious! Try these out, they are from quakeroats.com, they don't use butter or margarine and use wheat flour. I put in a little coconut as well.
Awesome Oatmeal Cookies
- 1 cup firmly packed brown sugar
- 1 egg
- 1/2 cup vegetable oil, preferably canola
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla
- 3/4 cup whole-wheat flour
- 1/2 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups Quaker oats (quick or old fashioned, uncooked)
- 1 cup “mix-ins” (dried cranberries, mixed dried fruit pieces, raisins, mini chocolate chips or chopped nuts)
Drop dough by level measuring tablespoonfuls about 2 inches apart onto ungreased cookie sheets.
Bake 9 to 10 minutes, until light brown. (Do not overbake. Centers will appear soft.) Cool 1 to 2 minutes on cookie sheets; transfer to wire racks. Cool completely. Store tightly covered.
