Maple syrup Weekend

In New York, every March they have a Maple Syrup Weekend. It's a state-wide thing and producers all around have demonstrations and taste testing. It was fun to see how the syrup is boiled and how it is taken from the trees. Our favorite was the maple sugar candy which is just maple syrup boiled down until there is hardly any water. It was quite delicious. We also got to take swigs of syrup and try maple cotton candy. YUM! Unfortunately, a gallon of syrup was $44 so we didn't buy any. The producers told us it takes 40 gallons of sap to make 1 gallon of syrup so that's why it's so expensive.
